• Location And Cultural Influences. The location of the school is particularly going to have some influence on the type of cooking techniques taught here. Tuscany is much different than Venetian cuisine. The most northern parts of Italy have a very unique twist on Italian foods over that of southern and middle Italy. • Alumni. Who came out of this school as a graduate and where did they go from there? Understanding the prestige of a school means understanding which talented chefs came from it. While you may not know them by name, you are likely to know them by the flavors, the restaurants or even their legacy. When considering a cooking school in Italy, find out what people that have been taught by the school have gone on to accomplish.
• Personal Interaction. One of the fundamentals of Italian cooking is learning the personal aspects of the foods you will prepare. For this reason, you want to make sure that you have an idea of what type of personal interaction you will have. The larger the school, the harder it is for you to communicate with the professionals and educators there. This can be a drawback in some cases.
